Turkey and Prawn Meatballs with Crispy Sweet Potato Hash

If you're looking for a fresh, nourishing meal that's light and packed with flavour, this Turkey & Prawn Meatballs with Crispy Sweet Potato Hash is the perfect dish. The juicy meatballs combine lean turkey with succulent prawns and a hint of fresh ginger for warmth. Paired with a crispy white-flesh sweet potato hash and a simple, zesty salad, this meal is balanced, high in protein, gluten-free and full of texture. This dish is super quick to prepare, making it ideal for busy weeknights or lunchtimes.

Ingredients:
For the Meatballs:
150g turkey mince (one portion, 3 patties)
50g raw prawns
1 tsp fresh grated ginger
Pinch salt
1/2 lime
For the Sweet Potato Hash:
1/2 sweet potato (I used white-flesh, but It can be substituted for any potato)
1 tbsp cassava flour (I am GF, but this can be substituted for any flour)
1 tbsp olive oil (plus a drizzle extra for frying)
2 spring onions
Pinch salt
I paired with mixed salad leaves but this is optional!
Method:
Make the meatballs
1. Roughly chop the prawns; you want varied texture, so be sure to leave some chunks whilst the rest can be smaller.
2. Combine with the turkey mince in a bowl and add the grated ginger and salt.
3. Shape into meatballs and add to a frying pan over medium heat with a drizzle of olive oil. Cook for about 4-5 minutes per side until golden brown and fully cooked through.
Prepare the Sweet Potato Hash
1. Grate 1/2 a sweet potato and add to a bowl with cassava flour, chopped spring onions, a pinch of salt and olive oil. Combine - This is best done with your hands!
2. Heat a drizzle of olive oil in a pan over medium heat, press the mixture into the pan until flat and covering the surface. Cook for 3-4 minutes each side until crisp and golden.
Serving Suggestions:
Plate up with mixed salad leaves and squeeze plenty of fresh lime over the meatballs.
