In case you missed the 🍦 I stopped AIP diet after 60 days and realising the restriction is taking away more than it’s helping - looking forward to having my balanced lifestyle back 💃🥑🍸🥕🍰

Finally able to eat eggs after reintroducing them successfully 🥚 🍳 🪺 just in time for Easter 🐣🐣

A love letter to the humble cabbage…. Pt1? 💌
Definitely one of the most underrated vegetables imo.
Steamed savoy cabbage makes a pretty plate for golden cauliflower rice salad with apricots, sweet potato, red cabbage and charred nectarine, topped with pickled red onion and a chicken breast wrapped in prosciutto.
Meals are subconsciously getting more and more summery… ☀️

Catch up!! Been slacking on the ig recently but here are some of my favourite recipes this week!

1. Chicken thigh, sweet potato + butternut squash curry with cauliflower rice and tangy smashed cucumber + red cabbage salad.

2. Lamb Steak with radicchio, figs, mint + chargrilled nectarines.

3. Springtime cauliflower rice and crispy chicken mince soup using @frejafoods chicken bone broth. Served with wild mushrooms, Swiss chard + sprouting cauliflower.

4. Leftover curry 🤭 but this time with shredded chicken - can’t decide which I prefer!

5. Homemade gluten, dairy and egg free tortillas with lamb steak, guacamole, @cocosorganic_ coconut + garlic yogurt sauce, and carrot, red cabbage and cucumber salad.

6. Tuna steak with a tangy salsa verde, purple sprouting broccoli, beetroot and rocket.

Somewhat of a full circle moment with this dish 🍽️

Lemon and thyme chicken thighs with cauliflower mash, braised red cabbage and roasted shallot.

The more I explore my cooking the more I find my mum always knew best… including this braised cabbage recipe which is slow cooked with raisins, lemon juice, apple cider vinegar, olive oil, garlic and salt. Perfectly paired with juicy chicken thighs and a delicate, creamy cauliflower mash.

This recipe is completely AIP/Paleo compliant but you can substitute cauliflower mash for potato if you’d prefer.

06/03 supper 🍽️ Pork belly strips roasted in tangy Braeburn apples, ginger, garlic and coconut aminos for a sweet umami flavour. Paired with white flesh sweet potato for carbs.
Sautéed wild mushrooms added depth and steamed cruciferous vegetables - spring greens, purple sprouting broccoli and Brussels sprouts for a peppery-ness.
Carrot salad with coriander and apple cider vinegar to cut through the earthy flavours.
And roast shallot for fun - yum

Made this delicious “chocolate” and raspberry cake which is completely AIP #AIP compliant and contains no nuts, sugar, seeds, dairy, eggs, gluten, or cocoa - believe it or not!
This cake is made from carob powder which is a common substitute for cocoa. The flavour is nutty and chocolatey, almost caramel-like, without the bitterness of cocoa. This is balanced perfectly with the tartness of raspberries and other sweet & unexpected ingredients…
I paired it with fresh berries, @cocosorganic_ coconut yogurt and homemade plum compote 😋🫐

Gluten, dairy & sugar free apple crumble
One of my favourite recipes so far!!!!

This makes 2 servings.
Apple recipe:
Chop the apples and half cover with water, add 1 tbsp of honey and a tsp of cinnamon. Cook until soft and add to a baking dish.

Crumble recipe:
Melt 2 tbsp of coconut oil and add roughly 80g of cassava flour (can substitute gf or plain flour) and 1 tbsp coconut flour. Rub with your fingertips until combined then add 1 tbsp of honey and combine again. Sprinkle over the apple in the dish and cook for 15 mins on 180 degrees fan.

I served with a sprinkle of cinnamon & coconut yogurt.

Here’s what I ate on my second day of AIP/Paleo diet:
❌Eliminating: gluten, dairy, nuts & seeds, refined sugar, seed oils, eggs, nightshades❌

☕️
I always start my day with bone broth. This provides essential nutrients to support gut health, balances cortisol & promote balanced hormone production. It’s super rich in minerals, stabilises blood sugar and packs 20g of protein! @frejafoods is my favourite.

🥣Breakfast:
I have been loving sweet-sweet potatoes for breakfast. I find the complex carbs keep me satiated until lunch and paired with coconut yogurt, stewed fruit of your choice (I love plums, cherries & apples) and cinnamon this is the perfect hormone balancing, fibre packed, gut friendly breakfast! Don’t knock it before you try it, I promise it’s not as weird as you think.

🥪Lunch:
Lunch is something I have been finding more difficult (although always have…). Today I was inspired by Cavolo Ripieno and had fun creating my own interpretation, though these are far from the Italian tradition 🇮🇹. The boiled cabbage leaves envelope ground turkey, grated courgette, carrot and plenty of garlic and onion and thyme. Will definitely make these again!

🍿Afternoon snack:
This is more of a want, not a need… but I’m obsessed with caramelised bananas 🍌 if you know me you’ll know that this is BIG news (until recently, bananas were just about the only food I wouldn’t eat) but this is a GAME CHANGER!! Dates are one of my favourite foods, rich in many minerals! Fun fact, they also support progesterone production 🏋️‍♀️This is a great snack for quick and sustained energy - an afternoon pick me up ⚡️

🍽️Supper:
This is one of my favourites so far! Cauliflower mash will definitely be a frequent carb. So creamy and so easy to make too! Paired with a pork loin steak, broccoli, mushrooms, rocket & 100% apple sauce this is a great combination of lean protein, fibre, healthy fats & powerful phytonutrients! It is recommended in @pippacampbell_health book “Eat Right, Balance Hormones” that Cruciferous vegetables may help lower oestrogen levels, I try to have 2 servings per day! They are also great for inflammation!

- Regulates hormones - blood sugar imbalances and excess oestrogen can worsen endometriosis symptoms🤒
- Addresses food sensitivity issues - by eliminating and reintroducing “trigger foods” AIP helps identify which foods might be making symptoms worse 🍫🍆☕️🌰
