Homemade AIP Cassava Flour Tortillas with Lamb and Fresh Slaw

If you're looking for a gluten-free, grain-free, utterly delicious and easy tortilla recipe, look no further. Made with just four simple ingredients, the're soft and perfect for wrapping around your favourite taco fillings.
For this recipe, I paired them with with a herby lamb steak, crisp carrot, cucumber, and red cabbage slaw, creamy guacamole, a dollop of coconut yogurt and sprinkle of fresh mint.

Ingredients (per 1 portion):
For the tortillas:
100g cassava flour
2 tbsp coconut yogurt
drizzle of olive oil
pinch of salt
For the lamb steak:
1 lamb steak
drizzle of olive oil
1 clove garlic - minced
1 sprig/tsp fresh rosemary
1 tsp fresh thyme
For the slaw:
1/2 carrot - julienned or grated
1/4 red cabbage - finely sliced or shredded
1/4 cucumber - smashed and chopped
1/2 tbsp olive oil
1/2 tbsp apple cider vinegar
squeeze of lemon juice
Guacamole:
1 avocado - mashed
pinch of salt to taste
1/2 shallot or red onion - diced
juice of 1 lime
Toppings:
1 tbsp coconut yogurt
fresh mint leaves
Method:
First, marinate the lamb:
To the lamb, add garlic, thyme, rosemary and olive oil and evenly coat.
While the lamb Is marinating, make the salad so it can soak in the dressing!
Add the carrot, cabbage, cucumber, olive oil, apple cider vinegar, and lemon juice into a bowl; mix well.
Next, guac!
Mash the avocado and add the diced onion, lime juice and salt to a bowl; mix well.
Now cook the Lamb Steak so it has time to rest:
Heat a pan over medium heat, sear for 2-3 minutes per side for medium rare (Depending on the thickness of your steak).
Remove from the pan and set aside to rest while you make the tortillas
Finally - the tortillas!
In a bowl, mix the cassava flour, coconut yogurt, olive oil and salt until combined. The dough should be very thick - don't worry if it's crumbly, it will all come together. (if not, add more yogurt or flour)
Generously flour a surface and separate the dough into 3 balls, flatten with your fingers until they form tortilla shapes. The dough is pretty resilient so keep going until they're as thin as you'd like.
Ensure both sides have a dusting of flour.
Heat a dry pan over medium-high heat and dry fry the tortillas for 1-2 minutes per side or until they have some colour.
Assemble your tortillas and enjoy!
