Turkey and Butternut Squash Burgers

These are a game changer for quick and easy flavourful lunch or dinner. They're AIP and Paleo friendly, nutrient dense and delicious!

Here I paired them with coriander cauliflower rice, purple sprouting broccoli, and cauliflower leaves.

Ingredients:

  • 150g turkey mince (per serving - makes three burgers)

  • 1/4 of a butternut squash grated

  • 1 tsp thyme

  • 1 tsp garlic powder

  • Pinch salt

  • 1/2 tsp grated ginger

  • 200ml bone broth

  • 100 ml coconut milk

  • Juice of 1 lime

  • Olive oil

Method:

  • In a large bowl, combine the turkey mince, grated butternut squash, thyme, garlic powder, salt and grated ginger. Mix well until evenly combined.

  • Shape the burgers into patties. Place patties into a frying pan with a drizzle of olive oil and brown on each side (approx 2 min each side).

  • Pour over the bone broth and coconut milk; simmer for 10 minutes until the sauce has become thick and almost disappeared.

  • Squeeze fresh lime juice and serve!

This recipe can be adjusted with different vegetables, I like to also use courgette, beetroot, broccoli or pumpkin!
