AIP Orange & Coconut Cake

This orange and coconut cake is the perfect sweet treat! It's moist, flavourful and packed with wholesome ingredients - without any grains, dairy, eggs, gluten, nuts or refined sugar.

The cake is completely AIP and allergy-friendly. It's naturally sweet and moist - perfect as an afternoon treat, breakfast cake or even a dessert with a drizzle of coconut cream or yogurt.

Ingredients:

  • 170g cassava flour

  • 80g coconut flour

  • 1 small baked sweet potato

  • 3 very ripe bananas

  • 300ml coconut milk

  • 60ml coconut oil

  • 50ml maple syrup

  • Juice and zest of two large oranges

  • Pinch of salt

Method:

  • Preheat oven to 180 degrees

  • In a large mixing bowl, combine the dry ingredients - Cassava flour, coconut flour and salt.

  • Blend the banana, sweet potato and coconut milk.

  • Fold the wet mixture into the dry ingredients.

  • Add the melted coconut oil, maple syrup, juice, and zest of one orange and combine. The batter will be much thicker than a normal cake mixture.

  • Transfer the batter to a loaf tin and smooth the top. Bake for 45-50 minutes, or until a skewer Inserted into the centre comes out pretty clean.

  • Mix the juice of 1/2 an orange and 1 tbsp of maple syrup and drizzle over the cake - allow it to cool for 15-20 minutes before slicing. Serve as is, or enjoy with a drizzle of coconut cream or yogurt for an extra indulgent touch!
